Jeff of Jeff the Silent Chef Catering interview

Jeff is co-owner and executive chef behind Jeff the Silent Chef catering and is a third generation chef who graduated from the California Culinary Academy in San Francisco after receiving a bachelor’s degree in Nutrition. Jeff the Silent Chef catering was recently placed on the 2011 Orange County Hotlist for Best Catering.

I61studio: How would you describe your signature style?
Jeff: We’re creative, extraordinary and unique in our cuisines. When someone comes to someone’s party or wedding, they’re going to see things that they’ve never seen before.

I61studio: How long have you been interested in cooking in general?
Jeff: Ever since I was maybe four, I was learning from my grandfather about culinary cuisine. I’ve always had a passion for food.

I61studio: Did you always know you wanted to be a chef growing up?
Jeff: I’ve always known that I loved food, and had a passion for food. But I never thought I could actually turn it into a career until I was a senior in highschool and my grandmother said “Why don’t you go to culinary school and become a chef?” Once she said that it clicked.

I61studio: What were you doing before running your own business?
Jeff: Before running my own business I was a private chef to celebrities in LA. My middle agent would send me off to different places and sometimes it would be Tyra Banks or John Travolta or someone different and I would be like: “Oh my gosh, I know you!” It was really fun.

I61studio: Who is your biggest inspiration?
Jeff: My biggest inspiration was my grandfather. He did not get to see me start the business, but he did get to see me go to culinary school with the passion that he had.

I61studio: What is your favorite food?
Jeff: I like fusion cuisine. I love doing fusion cuisine – taking bits and parts of cultures and fusing them together to come up with something unique and different.

I61studio: Do fusion cuisines work well for multicultural weddings?
Jeff: Yes. We just did one a little while ago where it was Polynesian and Peruvian. So they had two cultures and we had to sit down and figure out how to incorporate both cultures into their meal.

I61studio: What do you like to do in your free time?
Jeff: Cook. It’s kind of funny – I can do a party and work 16 hours for four days in a row and then on my day off the first thing I’m thinking about is who’s going to come over to my house so we can cook and have fun. So I’m pretty much always cooking. It’s fun cooking.

I61studio: What do you love most about doing what you do?
Jeff: I really love the friendship that comes out of doing weddings. I love meeting people and keeping in touch with them. And also I just love seeing the reaction on people’s faces. Weddings are very important events, so when we’re able to make their vision a reality and make it everything they ever wanted it to be, it’s a great feeling.

Amanda and Will’s Engagement Party in Laguna Beach, CA

The ocean view added to the nautical theme for Amanda and Will’s engagement party in Laguna Beach, CA.   Jeff the Silent Chef Catering  partnered once again with Elite OC Productions to execute another incredible event .  The close family and friends enjoyed tray passed appetizers that included Chicken Satays, Miniature Crab Cakes, and Grilled Shrimp Mango & Papaya Croutons.  Captain Morgan himself greeted everyone with a signature Rum Punch and tended to the Rum Bar.  Dinner included Rosemary Encrusted Jamaican Jerk Flank Steak and Caribbean Mango Stuffed Chicken with  Coconut Rice.  The last course was dessert that included Strawberry & Chocolate Chip Creme Brulee and the Dark Chocolate Mousse w/ White Chocolate Anglaise center.  The evening proved to be a great way to new family members to meet and celebrate the engagement.

Bridal Show by EXPOBRIDAL in Newport Beach, CA at The Hyatt Rgency Newport Beach

 Jeff the Silent Chef Catering participated as an exhibitor at Expo Bridal Show in Newport Beach, CA.  Hundreds of brides and grooms came to see and meet elite wedding professionals at the the beautiful Hyatt Regency Newport Beach   Brides had the opportunity to meet Chef Jeff and try his signature Strawberry & Chocolate Chip Creme Brulee and Raspberry Cheesecake Bites.  Jeff and his team were informed that they showcased an amazing booth and did receive several complement’s from the attendees and the shows organizer.  It was a great way for all to get familiarized with one another.

Holiday Family Style Catering in Newport Beach, CA by Jeff the Silent Chef

Linda with Elite OC Productions wanted to host an upscale yet casual holiday dinner party.  Her home had wonderful holiday decor with a beautiful Christmas Tree, fresh cut garland and ornaments.   The colors were gold, red and brown with rentals provided by Signature Party Rentals   The night started with a champagne reception and an International Cheese Display.  The food was served family style on the main table.  The food presentation was very warm and inviting.  The guests enjoyed Rosemary Rack of Lamb, Herb Encrusted Turkey w/ Handmade Cranberry Relish, Sauteed Asparagus w/ Caramelized Onions, and Roasted Garlic Mash Potatoes.  The night ended with Creamy Smooth Cheesecake, and Mini Martini Crem Brulee.  The guests loved the communal feel of the food presentation and loved that they could have seconds without leaving the table.  It was a very festive holiday party indeed.

40th Birthday Party in Ladera Ranch Catered by Jeff the Silent Chef

Irene wanted to make her husband’s 40th birthday party extra special.  She wanted amazing food and beautiful decor.  Her home in Ladera Ranch, CA provided the perfect setting.  With the help of Signature Party Rentals and the Silent Chef staff all the details came together.  The party took place in the backyard under a white tent.  The guest were greeting witha live piano player and an open bar with signature cocktails.  The popular drinks of the night were Mojitos and Chocolate Martinis.  The guests enjoyed Tray passed appetizers that included Grilled Shrimp w/ a Mango Papaya Chutney, Tuna Sashimi Shooters, Miniature Crab Cakes, and Smoked Salmon Mousse Cucumber Rolls.  The guest then enjoyed the main attraction of the night a carving station of a Pan Seared Beef Tenderloin w/ a Port Wine Reduction, Rolled Sole w/ Crab & Scallop Stuffing, and Roasted Garlic Mash Potatoes.  The night concluded with birthday cake provided by Cinderella Cakes and Jeff’s Special Trio of Desserts.   The husband was so impressed with everything his wife coordinated he serenadedher with a song “The Most Beautiful Girl in the World”.

Chef Jeff Catering for OC Wedding Pros’s Breakfast Mixer at The Garden Cottage at the Green, San Clemente

Chef Jeff and his talented staff catered breakfast for The OC Wedding Pros at The Garden Cottage at the Green Bed & Breakfast  The menu included an omelette station, yogurt parfaits, fresh fruit, and a beverage and flavored coffee station.  Adelle Adams of , Eddie Gonzalez from,  and with the help of Signature Party Rentals  helped create a beautiful mixer for all the wedding professionals in attendance.  Sandra and Bill the owners of the Bed & Breakfast attended the breakfast and were on hand to talk about the history of the B&B and give tours of the property.  Sandra also personally arranged the flower centerpieces for the mixer.  It was a very fun and great meeting for all who attended.

Now one of the most anticipated events of the fashion season, for one night only, fashion shoppers can take part in late night shopping at participating stores nationwide. The event keeps on getting bigger and better. Loehmann’s  is thrilled to be doing it again! Shoppers were the first to see what top fashion designers were in the back room. They were invited to enjoy great tasting food catered by Jeff the Silent Chef Catering  and wine by My Wines Direct .  The guests were able to preview new arrivals from Valentino, Gianfranco Ferre & many other favorite fashion designers.  It was a fashionable fun time had by all.

Corporate Catering in Mission Viejo, California

Allergy and Asthma Associates hosted a Physician and employee appreciation celebration in Mission Viejo.  They transformed the office waiting room into a cocktail reception with rentals from Signature Party Rentals  the colors were chocolate and burnt orange.  The fall theme carried into the custom invitations hand-made by Sandy from Paper Melange  The desserts were produced by baker Lisa Lowe from Sweet n Lowe’s Cakery, the sweets were paired up with an elaborate espresso bar from Affair Ala Carte .  The invited guest enjoyed music by DJ Todd form Essential Mobile Music  Jeff the Silent Chef Catering created the menu that included Tuna Sashimi Shooters, Parmesan Chicken Stuffed Mushrooms, Traditional Bruschetta, and the Grilled Shrimp Mango Chutney Crouton.  Everyone seemed to really enjoy the food and Cherie  the host with Allergy and Asthma Associates was ecstatic how wonderful the night came together.

Orange County Yacht Catering on Paradiso at the Newport Beach Boat Show

It is always an great adventure for Jeff the Silent Chef to cater on a boat.  It was a good time had by all at the Newport Beach Boat Show with appetizers and champagne.  The menu included Miniature Crab Cakes, Smoked Salmon Mousse Cucumber Roll, Sun Dried Tomato Goat Cheese Crostini, Grilled Shrimp Mango-Papaya Chutney Crouton, and the Ocean on Ice – Jumbo Shrimp and Crab Claws to name a few.  

Paradiso  is the perfect setting for an unforgettable, romantic wedding or social gathering.  The yacht’s open-air upper deck or the foredeck can be transformed into a beautiful ceremony spot. The upper deck or main salon can be set up for a gorgeous dinner reception. Paradiso is ideal for small to medium sized party up to 70 guests.  Chef Jeff and his crew are looking forward to many more adventures on the water.

Octoberfest in Laguna Beach, CA was the theme for the International Special Events Society monthly meeting at Occasions at Laguna Village . Occasions affords a breathtaking view of the pacific ocean hosting special event and weddings. Chef Jeff created a special German inspired menu that included Wurst, Chicken Cordon Blue, Bavarian Potato Salad, and German Red Cabbage. ICES had a special guest speaker from Sam Adams

Brewery that spoke about the history of the company and enlightened the crowd with beer facts and information as well conducting a tasting. It was a great time had by all. Jeff the Silent Chef Catering and staff were honored to be a part of this great evening.

Orange County Wedding Catering at The McCharles House in Tustin for Jon & Lindsay

Jon and Lindsay wanted an outdoor garden wedding. They picked the perfect venue The McCharles House a classic Victorian home in Tustin. Audrey and Vivian the mother daughter team that own McChales House call themselves ”connoisseurs of graciousness” a very fitting title for them. The ceremony was officiated by Todd Rodarmel and took place in the gazebo that was personaly donated by Walt Disney.

Jeff the Silent Chef catered tray passed appetizers for the cocktail hour that included chicken parmesan stuffed mushrooms, sun-dried tomato baby mozzarella skewers, and papaya-mango pacific shrimp chutney.

The reception took place in the garden with centerpieces by Sussanna of French Buckets they looked amazing. The personalized buffet included creme brie and apple stuffed chicken, rosemary incrusted flank steak, garlic mashed potatoes, and sautéed asparagus w/canalized onions and red bell peppers.Then it was time for the unforgettable wedding cake designed by It’s all about the Cake . Jon and Lindsay wowed their guest with an incredible dance number they been practicing for months. This wedding was definitely a perfect “10″ that was all captured by Mike D’Avello photography

Rancho Capistrano Catering for Mandie & Jeff

Mandi and Jeff had relocated to Colorado during the planning of the wedding in Orange County. They wanted to keep it close to most of their family and friends. They picked Rancho Capistrano to be the stage for the ceremony and the reception. The menu for the cocktail hour was an International Cheese display, elaborate fruit, and cured meats.
Jeff the Silent Chef then went to work on the seated dinner of Creme Brie & Apple Stuffed Chicken and Rosemary Crusted Flank Steak with Roasted Garlic Mash Potatoes. Tricia Barr did a magical job with the flowers!
